If you are not celiac but you are gluten-sensitive, you may be able to eat einkorn. It has gluten but not as much as its wheat cousin. I want to pass the information (and some recipes) along!
According to D. Gary Young, Einkorn is the “father of all grains”, 14 chromosomes, non-GMO. It has a higher protein content than common wheat and a beneficial gliadin-to-glutenin ratio. Einkorn is whole grain, non-GMO, and lower in gluten. The big difference is modern (dwarf) wheat has 42 chromosomes and einkorn has 1 genome and 14 chromosomes. It has the simplest genetic code and is easily grown organically in mountainous areas even in poor soil conditions.
It has low glycemic index, low gluten levels, two and half times richer in protein than commercial wheat, three times higher antioxidant, twice the vitamin A content of modern wheat, three to four times more beta carotene, four to five times more riboflavin, easily digested and is an ancient mineral-and-vitamin dense grain.
Einkorn is the original “staff-of-life” grain, known as the oldest variety of wheat, which dates back to the beginning of time. Einkorn’s natural genetic code and low gluten levels make it a superior choice because of the compatibility with the human body when compared to the modern hybrid wheat of today. Einkorn grain is easier to digest, so nutrients are better absorbed. Today Young Living is helping to bring einkorn back to its rightful prominence in the world.
If you are gluten-sensitive, you might be able to tolerate einkorn. That’s good news for many. Young suggests trying a small bite of einkorn pancakes or bread to see how you do.
